Happy Friday! Somebody alert the press, I’ve made TWO recipes this past week!! Maybe it’s because I’ve been trying to find healthier snacks, maybe it’s because of Pinterest, or maybe it’s because I woke up early and had nothing better to do–Either way you slice it (sassy cooking pun), something delicious was created!
In true Lexi fashion, it is easy. It’s arguably even easier than the Caprese Salad, if only because the ingredients are slightly more likely to be around the house. I found it on Pinterest and I have yet to give it a better title than “Delish Apple Slice Snack”
This recipe is so simple that there’s really no need for ingredients or directions, but I’ll do my best:
- Fresh apples
- Creamy peanut butter
- Chopped pecans (or walnuts, which I used because I was too short to reach the shelves with the pecans)
- Oats (or plain granola, which I used because I couldn’t find the oats)
- Chocolate chips
- Core and slice apples
- Spread layer of peanut butter onto one side of each of the slices
- Sprinkle the oats, pecans, and chocolate chips over the peanut butter (I’ll admit to doing some slightly heartier sprinkling with the chocolate chip bag than with the granola or walnuts)
